Brownie Heart Cupcakes

I've always loved Valentine's Day. While so many people are cursing the hated hallmark holiday, I love the sappy romantic stuff: flowers, chocolates, candies… count me in! Valentine's Day is the perfect excuse to dress up and go out to dinner, whether it be with your beau or a group of your single girlfriends and celebrate your love for each other. I've already started whipping up some Valentine's Day themed desserts. Over the weekend I made these Brownie Heart Cupcakes. They tasted just as good as they looked!

Pita Pizza

Whenever I make tomato sauce, I try to make different dishes rather than just your typical pasta (like the Lasagna Rolls I made here). I decided to use some of the leftover sauce I made last week to make Pita Pizzas. So simple and quick, and they tasted like perfection. I didn't follow a recipe. I just used store bought pitas and topped them with tomato sauce, slices of mozzarella and fresh basil, and cooked them in the oven at 450 degrees for about 15 minutes, and voilá!

Lasagna Rolls

Whenever I'm cooking for others, I always make something Italian, preferably with sauce. My grandma taught me her secret sauce recipe a couple of years ago and I've perfected it. Over Christmas break I had a dinner party with some girlfriends and made these amazing Lasagna Rolls. They were such a big hit that I decided to make them for Pat's family. I modified the recipe a little... took out the spinach & prosciutto, and used my grandma's sauce recipe instead of Giada's. They were so delicious and filling! Everyone loved them. 




Recipe: Chicken Quesadilla

Chicken Quesadillas are one of my favorite foods to make. They're quick and easy and taste amazing. Yesterday I was home by myself for the majority of the day and decided to whip one up for lunch.

Ingredients:
2 Flour tortillas
1 cup Shredded, cooked chicken
1/2 cup Monterey Jack cheese
1/2 cup Cheddar cheese
1 tablespoon Chopped, fresh cilantro 
Salsa (optional)
Tortilla Chips (optional)


Directions:
Heat medium size frying pan over medium heat until hot. Place tortilla in pan and sprinkle with chicken, cheeses, and cilantro. Top with second tortilla. Cook about three minutes until the underside of the bottom tortilla is golden brown and cheese has begun to melt. Using a spatula, carefully flip the quesadilla over and cook until other side is golden brown and cheese has fully melted. Remove quesadilla from pan. Cut into wedges. Serve with a side of tortilla chips and salsa.
